Samuel Houston "Hue" Singleton, the first African-American restaurant owner in Decatur, came to town when E. G. Egbert bought the Revere House. Egbert brought Singleton with him from Iowa to work as a bellhop and waiter at the Revere.

In 1884, a proprietor who had been operating a poorly patronized restaurant on the northwest corner of Lincoln Square disappeared. Singleton bought the building, Cleaned out the cockroaches, hired one of the best cooks in the city and his clientele grew as the word spread about the good food.
